Nêm me hay bột chua?

Nhiều người thường có thói quen nêm vị chua bằng me khi nấu món canh chua. Cũng có người cho chanh vào nấu và thấy ngon hơn, một số người khác lại bảo cho bột me làm sẵn đóng gói ngon hơn... Thực sự thì sao?

Dùng vị chua của trái cây tươi bao giờ thức ăn cũng ngon hơn dùng các loại bột pha chế. Các nhà hàng dùng bột me để tiện khi nấu và tiết kiệm chi phí đi chợ do lượng khách ngày ít ngày nhiều khác nhau, bột trữ được lâu hơn me tươi. Nấu canh chua có thể phối hợp cả hai vị chua của me và chanh. Khi nấu nước bắt đầu sôi, lấy nước lọc với me tươi bỏ hết hột và bã trái. Nêm vị hơi chua, sau đó nấu hoàn thành món canh, lúc chuẩn bị ăn, vắt thêm miếng chanh vào sẽ làm nước canh trong hơn và canh chua có vị chua thanh ăn ngon miệng hơn.

Nấu lẩu canh chua thế nào cho ngon?

Canh chua là món chín rất nhanh, nên dù nấu theo kiểu nấu canh trong bếp hay nấu kiểu lẩu thì chỉ cần đổ nước sôi vào các thứ rau giá, bạc hà, thơm... đã sắp sẵn, sau 5 phút là có thể ăn.

Nấu lẩu canh chua ngon nên mua cá tươi cắt thành từng khứa với độ dày trung bình 1-1,5cm. Nếu cắt khứa lớn quá, cá lâu chín và sẽ làm rau bị nhừ và giảm bớt độ ngọt tự nhiên của cá tươi.

Cá nấu lẩu chỉ cần nước sôi 5-10 phút là chín, ăn vừa ngon. Nấu lẩu canh chua cũng như các món lẩu khác phải nấu nước dùng cho thật ngon. Nước canh chua nấu với đầu cá, xương cá cho vị ngọt và mùi vị cá. Do đó cần có nhiều ớt tươi để át bớt mùi cá và làm canh chua thêm ngon. Sau đó nêm với me tươi, một chút đường cho đằm vị chua, một chút muối và đổ nước này vào trong lẩu đã sắp sẵn các thứ rau nấu canh cùng với cá tươi, trên mặt để một vài lát ớt. Ðó là cách truyền thống; nhiều người hiện nay chuộng kiểu lẩu chua cay như khẩu vị Thái Lan cũng có thể nấu nước dùng với gừng nướng cắt lát, củ sả đập dập và cho một chút ớt satế cho có mùi thơm.

Nêm đường hay bột ngọt?

Xu hướng chung hiện nay rất ít dùng bột ngọt trong nấu ăn mà tận dụng kỹ thuật nấu để giữ cho các loại rau củ thịt cá giữ được vị ngọt tự nhiên. Riêng với canh chua, nấu theo vị Bắc ít dùng đường; nấu theo vị người miền Nam có thể thêm một chút xíu đường cho đằm vị chua.
